Pargot earned a Michelin Guide mention for its contemporary Mexican cooking under chef Alexis Ayala. The restaurant recently relocated from a tiny space to a larger location directly across the street in Roma Norte, though reservations are still highly recommended.

The duck is a standout — cooked with precision and bold flavors — and pairs with the secret Negroni, made with fat wash from the same duck on the menu. The crab risotto (described as tasting like a hug), flat bread, and deconstructed vuelve a la vida showcase both technique and creativity. The pork tetela, sobrasada tamal, and octopus also earn consistent orders.

The space is simple and relaxed, with attentive service that offers solid recommendations without pretense. The cocktail program is strong, and wine selection includes both Spanish and Mexican bottles. If you're going, order the duck and ask about the Negroni.
