Bajel is a Michelin Guide-recommended contemporary Mexican restaurant on the 14th floor of the Sofitel Mexico City Reforma, where Chef Alonso Vidal leads an open-kitchen tasting menu experience with views over Paseo de la Reforma. The multi-course degustación format rotates around themes — recent menus have centered on fire, with smoked and charcoal-grilled elements running through each dish — and the kitchen works with traditional Mexican ingredients like mole blanco, huitlacoche, and Kampachi tuna tartare, reimagined with technique and precision.

The dining room is intimate and dark-walled with natural light flooding the open kitchen and marble counter, where you can watch the brigade plate each course. Servers describe the story behind every dish in detail, and the optional wine pairing matches each course closely. The restaurant is closed Mondays; reservations strongly recommended for dinner service Tuesday through Sunday.
